Coconut Milk Rice
Ingredients:
- Basmathi Rice - 2 cup
- Vegetable Mix - 1 cup
- (Carrot , Beans , peas )
- Onion - 1
- Ginger & Garlic paste - 1 teaspoon
- Chilli - 2
- Coconut - 2 tablespoon
- Cashew nuts - 3
- Salt - as required.
For Seasoning:
- Oil & Ghee - 2 tablespoon
- Cashew nuts - 10
- Cardamom - 1
- Clove - 3
- Cinnamon sticks - 2"
- Bay leaf - 1
- Coriander leaf - 1 tablespoon.
Method :
1. Soak the rice for ten minutes.
2. Cut the vegetables in longitudinally.
3. Grind the coconut and Cashew nuts together.
4. Heat the cooker and add oil, ghee. Fry the Cashew nuts and keep it aside for seasoning later.
5.Add Cardamom ,Clove ,Cinnamon sticks ,Bay leaf in the same oil and Ghee, wait till the color changes to light brown and then add onion .
6. When the onions become transparent add Ginger garlic paste. Fry for 2 minutes. Then add all vegetables and stir a couple of times.
7. Now add coconut cashew paste and two cups of water.
8. When it starts to boil add salt as per your requirement .
9.Keep the cooker closed without weight.
10. When the mixture boils nicely, add the rice and keep the stove in sim mode while putting on the weight.
11. After 10 minutes switch off the flame.
12. Allow the cooker to cool by itself.
13.Garnish with fried cashew nut and coriander leaves.You can serve the coconut milk rice with some masala curry or some chips.
