Ingredients:
For vada:
- Channa dal : 250 gms
- Red chillies : 6
- Ginger : 2" piece
- Green Chiili - 3
- Onion(big) - 1 ( Small means- 10)
- Curry leaf - 1 or 2 bunch.
- Asafoetida - 1/2 teaspoon.
- Salt - as per your requirment.
- Oil for frying.
For rasam:
- Red chilli - 3
- Coriander seeds - 1 tea spoon
- Pepper - 1/ 2 teaspoon
- Cumin - 1/2 teaspoon
- Garlic - 3 or 4
- Turmeric powder- 1/2 tea spoon
- Tamarind paste - 1 tea spoon
- Tomato - 1
- coriander leaf for Garnishing
Ingredients for seasoning:
Oil/ghee - 1 tsp
Mustard seeds - 1 tsp
Asafoetida - 1 pinch
Turmeric powder - 1/4 teaspoon.
Curry leaf - 1 bunch
Whole chilli - 1
METHOD:
How to make Vada:
- Soak the dal in water for one hour.
- Drain and grind coarsely with ginger chilli ,asafoetida.
- Chop the onion and curry leaf.
- And mix it with the above mix.
- Add salt and deep fry in hot oil.
- Roast the peppercorns, coriander seeds and cumin seeds for a minute.
- Grind them into a masala powder with garlic and chillies..
- Chop the tomatoes into small pieces.
- In a sauce pan, heat oil/ghee.
- Add mustard and cumin seeds. When they stop crackling, add asafetida
- and turmeric powder, curry leaves.
- Then add the masala.
- Also add tomato fry for a while.
- Then add tamarind paste.
- Add 3 cups of water.
- When the rasam start to boil off the stove and Garnish it with chopped coriander leaves...
- Add the vadas.
- Keep closed for 1/2 hr.
- Now rasa vadai is ready.
- This is very good with Idli, Coconut chutney .
